Which Ginger should I choose?
CO2 extraction pulls more of the delicate constituents out of the plant material that can be damaged by the heat of steam distillation. This results in a more potent oil, both in aroma and in therapeutic value. CO2 extracted oils tend to be more expensive than steam distilled oils, but the higher quality is often worth the price. Ginger and Ginger Sweet are steam distilled. Ginger CO2 is extracted by the CO2 method.

|Cautions:||Ginger oil is extremely potent, almost to the point of being caustic. If it is used undiluted or used to frequently, it may irritate sensitive skin. The oil is also phototoxic; skin which has been applied with ginger oil needs to be kept out of direct sunlight for at least 12 hours.|
