Parsley Root may be used effectively for gout and arthritis. The volatile oil, some of which is preserved if the herb is properly handled in the drying process, relieves cramps and gas pains and is a strong uterine stimulant. While Parsley is an excellent herb, it should be avoided by nursing mothers as it efficiently dries up the milk supply. Parsley is rich in vitamins and minerals, and contains a lot of easily assimilated iron. Parsley contains whopping amounts of vitamins A, B, C, and E. The B vitamins alone make it worthwhile to add to your food recipes and to use frequently as a medicinal herb. Parsley also contains iron and flavonoids that are antioxidant and anti-inflammatory.
